Fennel, Rocket and Shaved Cucumber Salad
The perfect post-lunch digestive drink... that also quells your sweet tooth! This combination of rose and buttermilk doesn't just aid digestion, but also cools excessive heat or hunger, while opening the heart.
The crispy texture and sweet, cooling qualities of fresh fennel, calms the mind and increases clarity. Paired with cooling cucumber, a vegetable that also acts as a blood purifier, and the peppery flavour of rocket, this salad is sure to delight all the senses!
Kaffir Lime Fried Rice
Rooibos is packed with flavour, nutrients and healing properties. When added with the spices I am using for the masala (blend) it becomes a flavour bomb that enlivens the senses, opens the heart and relives the digestion from woes. It also helps create a clearer, brighter skin complexion while nourishing your entire body!
We have a kaffir lime tree out the front of our house, it was probably the best purchase we have ever made! The smell and flavour that is amplified from this leaf is magnificent, it also has an incredible amount of medicinal properties.
Fresh, sweet and cooling coconut! Coconut is a highly regarded food in Ayurveda. It is predominant in the sweet taste and has a cooling effect. Coconut is fantastic in small amounts to nourish and invigorate the body and it also promotes contentment and satisfaction in the mind due to its sweetness.
This recipe has been handed down to me from the one and only Ayurvedic chef himself, Tim Mitchell. I have been blessed to be able to spend time with this man and learn from his ocean of knowledge. This curry had been eaten so many times by us we have lost count!
